Between my day job, working on my blog, and making time for family, I am always looking for ways to cut down on meal preparation time. I have finally mastered being able to make one trip to the store on Sunday night and buy everything I need for dinner throughout the week (Monday-Thursday), without getting bored OR feeling like I am eating leftovers.
The key to planning easy meals throughout the week with only grocery visit is buying versatile ingredients that you can repurpose for several meals, and incorporating healthy products that can reduce prep time. Two of my favorite products that make it easy for me to make these quick and healthy meals are Tyson Grilled and Ready Chicken and BirdsEye Protein Blends.
First I plan my meals for the week:
- Monday – California Club Quesadilla
- Tuesday – Asian Sesame Chicken Wrap
- Wednesday – Chicken Kabobs
- Thursday – BBQ Chicken Wraps
Then, I purchase my ingredients – based on 2 servings per meal (my boyfriend and I):
I start with my protein and sides, which I purchased from Walmart. The Tyson Grilled & Ready Chicken is awesome because it cooks in under 5 minutes and is make with 100% natural all white meat chicken. My other favorite are the BirdsEye Protein Blends because they are healthy, easy, and come in a variety of flavors:
- Tyson Grilled & Ready Chicken Breast Fillets
- BirdsEye Protein Blends – Italian Style
- BirdsEye Protein Blends – Southwest Style
- BirdsEye Protein Blends – Asian Style
- BirdsEye Protein Blends – California Style
Then I purchase my other ingredients, which will be repurposed for several recipes.
These are the other ingredients:
- 3 Bell Peppers (I used red, green, & yellow)
- 2 Avocados
- 1 Onion
- Shredded Cheese (I used a 3 cheese blend)
- Tortillas
- BBQ Sauce
- Asian Sesame Dressing/Sauce
- Chow Mein Noodles
- Skewers
- Bread (optional, as a side)
1) California Club Quesadilla
- Tyson Grilled & Ready Chicken Breast Fillets
- BirdsEye Protein Blends – California Style
- 1 Avocado
- 1/2 Green Bell Pepper, 1/2 Red Bell Pepper
- 1/3 Chopped Onion
- Shredded Cheese
- 4 Tortillas
Because my avocados were ripe, I made my California Club Quesadilla for Monday night. Start by microwaving 2 Chicken Breasts according to the directions on the bag and then cut them up into pieces. Then lay out a quesadilla and place layer of cheese, chopped chicken, onions, avocado, and bell peppers. Place another tortilla on top and place on a buttered skillet. Let it cook for about 4 min on each side (or until your tortilla is crispy). While your Quesadilla is cooking, microwave your BirdsEye Protein Blends – California Style according to the directions on the bag (they are awesome because they cook right in the bag in under 6 minutes).
2) Asian Sesame Chicken Wrap
- Tyson Grilled & Ready Chicken Breast Fillets
- BirdsEye Protein Blends – Asian Style
- 1 Avocado
- 1/2 Red Bell Pepper
- Chow Mein Noodles
- Asian Sesame Sauce
- Tortillas
I made the Asian Sesame Chicken Wrap next, because it is the only other recipe that incorporates the avocado, and I find that if I don’t use the avocados quickly they go bad. To make the Asian Sesame Chicken Wrap, lay your tortilla flat and fill with a chopped Tyson chicken breast (after cooking it according to the bag), add avocado, Red Bell Pepper, Chow Mein Noodles, and Asian Sesame Sauce. Cook BirdsEye Protein Blends – Asian Style according to bag, and add as side.
3) Easy Chicken Kabobs
- Tyson Grilled & Ready Chicken Breast Fillets
- BirdsEye Protein Blends – Italian Style
- 1 and 1/2 Bell Peppers (I used red, green, and yellow)
- 1/3 Chopped Onion
- Shredded Cheese
- Skewers
- Salt and Pepper (optional)
Next I made these easy (and healthy) chicken Kabobs! First soak skewers in water for 5 min and preheat oven to 350 degrees. Microwave 2 Tyson chicken breasts for about 3 minutes. I know that this is not what the directions on the bag say, but we do not want to cook them all the way through yet because we will be putting them in the oven. Cut up bell peppers, onions, and chicken and begin placing them on a skewer alternating ingredients. Cover with light salt and pepper (optional). Place skewers on baking sheet and bake for about 8 – 10 minutes (or until you see the edges of the peppers slightly brown). While baking, cook your BirdsEye Protein Blends – Italian Style according to the package. Serve.
4) BBQ Chicken Wrap
- Tyson Grilled & Ready Chicken Breast Fillets
- BirdsEye Protein Blends – Southwest Style
- All the remaining peppers and onions
- Shredded Cheese
- BBQ Sauce
- Tortillas
Cook Tyson Chicken according to the bag. Place chicken, cheese, all left over peppers and onions, and BBQ sauce in your tortilla. Cook BirdsEye Protein Blends – Southwest Style, according to the bag and serve as side.
This is one of my favorite menus for the week because it is healthy, has variety, and it is under $5 a serving! I hope these recipes will help you save some time when preparing your meals in the future, and show you that you don’t have to compromise on home cooked dinner just to save a little time.
