Amelia’s FAVORITE Easter candy (actually her favorite any candy) is Cadbury Creme eggs. In her opinion, these are the food of the gods. Quite literally. Kristen isn’t a huge fan, but given the opposition she agreed that we could try an Easter treat involving these little guys. After scouring Pinterest, we decided on Cabury Creme Egg cupcakes. As you well know from our peppermint kiss brownies, pinata cookies and brownie-in-a-cupcake, we love putting treats inside other treats. It’s really grown to be our specialty- why choose one dessert when you can have both? Here’s how ours came out compared to the Pinterest version:
Neither version looks very pretty, but this pin is more about taste. First, you’ll need a box of chocolate cake mix and some Cadbury Creme eggs. Pop your Cadbury Eggs in the freezer for a couple hours.
Once you feel like your eggs are thoroughly chilled, mix your batter and pour it into a cupcake pan. Unwrap your eggs. We pressed ours into the batter standing up, but they sank to the bottom and hardened a little bit when they baked. After we realized that this happened, we did some research and apparently it’s a better practice to place them sideways on top of the batter.
Bake according to the package directions and let your cupcakes cool.
Throw some icing on the cupcakes and you’re done!
Amelia loved the cupcakes and Kristen didn’t, as you all probably expected. These are a great choice if you like Cadbury Eggs, but if not, you may want to pass them up!
